I'm Chef Mathew Thomas, a passionate culinary professional with over 35 years of diverse experience in the food and hospitality industry across India, the Middle East, and the United States. My journey began with a strong educational foundation, completing High School, followed by a Diploma in Cooking, Restaurant & Counter Service, Reception, and Bookkeeping — a blend that shaped me into a chef who understands both flavours and front-of-house finesse.

With a deep commitment to culinary excellence, I've dedicated my career to exploring the diverse flavors and techniques of international cuisine and advanced cookery. My educational journey has taken me from a diploma in cooking to hands-on experience in restaurant and counter service, as well as reception and bookkeeping, all of which have contributed to my well-rounded expertise in the culinary field.

I started my career as a Management Trainee at Bangalore International, which set the tone for a remarkable journey through some of the finest establishments in the world.
I honed my craft as a Chef Trainee at Bombay Taj International, then climbed the culinary ladder at Ramada Hotel, Abu Dhabi, where I embraced the art of Middle Eastern cuisine.
My Leadership skills were further sharpened during my tenure as Executive Chef at National Hotel Company in Buhaira Oil Refinery, and again at Saj Flight Kitchen, where I managed large-scale operations.
One of my most impactful roles was serving as Chef at Rasmid Hospital, Dubai, where I dedicated 12 years to managing food service for a 500-bed healthcare facility, balancing nutrition, taste, and efficiency.
Beyond hotels and hospitals, I took to the seas with Royal Caribbean Cruise Lines, bringing culinary excellence to international waters.
